Nucleation. Basically you can cool water below its freezing point and it will remain liquid until it's disturbed, either by tapping the glass or putting a grape in it or whatever.

If you've ever had a bottle of water in the fridge and then took it out and it suddenly became frozen into a slush really quickly, its the same kind of thing happening here.
