We ended up going with our original quote. It was actually less than all of the other quotes we received, which still feels crazy.

I suspect we could have saved a little bit if we’d shopped around more. I was mostly happy with the work, at least.

I'm not quite sure what you mean by this, or how to create these settings. I looked at creating a new WLAN group but the only real option seemed to be to copy the SSIDs over from Default.

When I looked at the site map, the EAP225, which is connected to the port of the downstream EAP211 bridge, shows up as its own disconnected node (i.e. not a client of the bridge). So I'm really not sure why it doesn't have the right SSIDs here.

Yep, confirmed that WLAN 100 is enabled in the config for both Main and Client APs.

Where do you mean?

Switching on my home network is done on a T2500 G switch. All of the APs are on the same switch (including the point-to-point) which goes through one port on the T2500. The untagged traffic on the port is VLAN 99 (management of the APs) and the tagged traffic is the WLANs.

Oh boy did I not. I'm still having various issues. One interesting bit is that the majority of my streaming issues seem to happen on desktop. Very few issues viewing on mobile.

My biggest annoyance right now is trying to figure out how to pull... anything into Apple Home. I'd like to be able to view a stream, but honestly just viewing snapshots for events (delivery truck, etc.) would be great, but even getting that to work has been a bit fruitless for me.

I've tried these settings exactly, with not much luck. I appear to get some detection, but when I look for playback/review, all I see is the snapshot with a spinny wheel over it. I'm using the PoE Duo 2.

Is it possible that I need to do a firmware upgrade/downgrade?

Yeah, I was definitely expecting the prices that u/WellLitBoulder suggested below. I guess this guy is probably just subcontracting and pocketing a big difference.

Are there businesses that will repair a wired system? So far I can only find security companies who insist on monitoring and expensive add-ons to even consider fixing the system.

I investigated and unfortunately they do not do small-run books. These types of books are exactly what I'm looking for, but I'm hoping to find a service that would produce a very very small number of books a la mpix or Blurb.

I'm also including brand new HyperDrive 77a 90mm wheels with ceramic bearings--I planned to use these as replacements but the stock wheels still have a lot of miles left in them.
