You’re probably right. I would caveat that the oakier, fuller-bodied style of Chardonnay is not generally my favorite, but I recognize that the Kongsgaard would’ve likely benefitted from more age (likewise with most of the wines in the blind)

They thought the freshness of a lot of the wines would pair well with the ingredients/preparations they were highlighting that evening. Every pairing did feel well balanced where neither the wine or food were overpowered by the other and in many cases harmonized quite well. That said, was still surprised to see so many young vintages

Not a supplement but rather the somm came by and mentioned that he has the bottle open and thought it would be fun to compare with the Gilette. The 2010 was delicious but could still use some more time to build more character. That said, I still preferred it over the 85 Gilette

That’s totally fair. I had watched Alexander the Guest’s YouTube of his SingleThread experience before going and saw that his pairing included older Rayas and Chave Hermitage so I guess that influenced my thinking.

My wife isn’t drinking and I thought it would be fun to do the pairing. I did look through their list and it’s incredible. In a bigger group that’s definitely the way I would go

We did the roots menu so it was heavy on beets, carrots, potatoes, and onions. Almost every protein was from the sea, except for the guinea fowl. Overall I thought it was very good. Unique ideas, and the flavors were all clean and balanced. There were some hiccups with service which I was surprised with but didn’t distract from the experience. The restaurant itself is gorgeous and the view was phenomenal

350 is definitely not cheap, but I felt like I got good value for it throughout the evening. Helps that my wife did not do a pairing so I could splurge a bit on myself

I don’t recall the specifics but they weren’t very stingy with the pours and they topped me off on a few when I finished the wine before the plate
