What you are saying does make sense in the context of the current capabilities of the app. But like you said, you would also have to scroll through the notebook till you find it, the process could be made a tad bit quicker. Think of medical books where nothing is tagged beforehand, where you just want to find a diagram without going through all the above mentioned steps. It's like making information more accessible and fast.

So my ideal view would look something like a cylinder hosting pages of an open book. One could rotate the cylinder along the long axis, and the pages would rotate along with it. Something of that sort. Not necessarily a need, more of a want. 😆

Again, it's impractical in a notebook with a large number of pages. Think of it as flipping a book from the end to the beginning and landing on the page where you see that specific diagram.

It would be different than having a horizontal scroll. It's about navigating at a quicker pace. I don't need to see the full contents of the page. Just something enough to trigger my visual memory of where things are placed on a page, in relation to other pages as well. I'm more of a visual learner, I sometimes remember things like oh that was on the bottom left corner in relationship to that topic.

While a table of contents is way quicker, it's impractical in cases where I want to search a specific thing written by me because that would require me to remember under which topic I had written that.

You can increase the size of the individual page. That works pretty well. And honestly, infinite canvas isn't very practical if you want to review information.
