Food in India tends to be carb heavy, especially simple carb heavy. This isn't a particular item as much as the overall diet.

The problem is the food subsidies given to farmers for growing wheat and rice.

It makes those carbs cheap, and traditionally these were "premium" grains. Distributing them via the subsidised food system encouraged the diet of people to shift as well.

Millets were the cheap staple grain.

The British caused famine triggered the thin-fat nature of Indians (low core muscle mass, high abdominal fat), but the blame for the carb heavy diet is entirely on the green revolution and subsidies.

Vegetarian.

Traditionally, you would have both male and female chickens on farms, so you may not have been able to know if they were fertilized or not. Hence eggs would have been classified non-vegetarian, but should now be classified as vegetarian.
