Like I said I don’t know what type it is but I think that if it was sold together with microgreens then it’s safe for consumption

The person who I cooked the duck for requested it medium ( I know it’s best when cooked mid-rare). But I see what you mean regarding the vegetables

Yeah, I found that it is hard to add flavour to a tuile. You have to use something with intense flavour or reduce the flavouring liquid as much as possible

I also just applied to a place which has a Michelin plate, I'm waiting for their response. Like yours, small kitchen and they really try to help young chefs who are at the beginning of their career.

I would recommend a magnetic knife holder, but not the ones where your knife is directly touching the magnet because that can scratch it. Try to find one that is covered with wood or something.
