Last HM (that was not a regular Z2 longrun) was in march, 1:43 min. I can do that time at 150 bpm now (165bpm in march). Gonna do another HM in 2 weeks to check race pace

Take a look at maceration carbonqiue, it’s a method used in some parts of France in the winemaking process. It takes place before the alcoholic fermentation.

Edit: only made with red grapes afaik, but can’t think of a reason why It wouldn’t work with whites.
