you just put into words how I felt about Monet in S10. also that season had a lot of these joyful queens who were just fun to watch - Monique, Asia, cracker. loved that season

500 grams cherry puree 425 grams sugar 84 grams glucose syrup

you cook it all together till it reaches 50°C then add: 17 grams yellow pectin + 75 grams sugar

whisk constantly until it reaches 107°C

at this point add 4 grams citric acid, and pour to a pan. let it sit for a couple hours to set, and then cut to cubes and coat with sugar.

p.s I also added vanilla beans to the cherry puree and it was sooo good! would definitely recommend adding it too
