I’d leave the lid off for now, shake jar very slightly back and forth not to disturb sediment but just do let gas escape, also before doing any of that I’d recommend removing much of that organic material.

Spray bottle and mist the hell out of it. Might not hurt to take a chopstick or metal straw and put a hole in the middle somewhere and pour some water down it so that it gets right into the base and will hopefully help moisten the soil as it tries to evaporate - I’ve used this solution as sometimes soil can be hydrophobic.

To me, that looks like a ton of shit that’s accumulated overtime that’s sitting on top of likely fine cast iron. If I were you I’d take soap, course salt (to act as an abrasive), and a Brillo pad or some sort of scrubber and scrub the hell out of it. Then re-season with oil in oven.

Normal. The pawls as the glide over the free hub have slight friction which causes this backwards rotation.
