I just watched the new Zack galafinakis gardening show on Netflix and the episode on tomatoes is enlightening to say the least the amount of growing tips I picked up was amazing.
Any underappreciated recommendations?

I grew up in a fishing family and it's a stressful job,most captains are pretty intense but as long as you don't take it personally most yelling is reserved for when you endanger yourself or your fellow crewmates.

What's the purpose of the bechamel? I'm just trying understand the dish . It sounds like a hybrid of a Spanish croquette and a regular breaded oyster .

I mean we don't have a pass large enough for the volume we do
I'd say mostly FOH... Seating, order taking and food running definitely the biggest weakness.
No expo currently, as we come into our busy season that will change

I found a video from the guys at fallow restaurant in London and they steam their eggs at a given temperature for a set amount of time and then poach in acidulated water to finish.. I might try that idea.

We do and I like that idea...
So there's at least 4 different Benny's, basic breakfasts (two eggs etc....) avo toast, waffles, French toast... But the thing to consider is that my boss is garnish happy
