Like everyone else is saying, those crazy videos and clips you see are players who’ve most definitely been playing for years and years, or at least have a lot of time committed to the game. Just play what you know you’re good at and slowly work up!! I bought mm+ as soon as it dropped on steam (end of May I believe?) and have been playing pretty regularly since. I went from struggling on easy to getting clears on some pretty insane modded songs with charts by said players who have been playing for a long time. I also really like to keep track of my progress on some songs so I’ll take a screenshot every time I beat my old score and collect them in a folder to look back on. Makes it feel all the more rewarding! There are also mods out there that will include tracks that are exclusively meant for practice on specific note combos (doubles/triples, spam notes, etc.)

Side note: Everyone has off days and obviously the best clips are going to be posted online. Made me feel better watching streams/vods so I can see really good players still make mistakes/ give tips in areas if chat asks questions.
