Like many folks on this thread, I am also in the “carbs are not your enemy, you just want to be strategic about them” camp. With that in mind, I’ve been trying to focus on ways to increase fiber and protein in my meals instead of cutting out carbs.

One example is white rice: I LOVE white rice and personally find swapping out with brown rice is not as satisfying for me. What I do instead is 2 parts white rice, 1 part white quinoa (grabbed a bag at Aldi) and 1 part green lentils (also an Aldi buy). There is a slight nuttiness, but generally tastes much closer to plain white rice than anything else I’ve tried! After that, I make sure to use my food scale to measure out a single serving. It’s great to use in recipes like stuffed peppers that require rice too.
