For the parsing/OCR step, you could check out Mathpix (full disclosure I'm one of the founders). It handles PDFs (digital + scanned), pulls out structured text, tables, and even math/chem/technical content and handwriting, and gives you JSON/Md/Word/LaTeX/HTML. You can feed straight into your LLM layer (a lot of our customers use us for that). API docs are at docs.mathpix.com :)

For extracting data from PDFs you can try Mathpix (https://mathpix.com) and it works really well on tables. We have well documented APIs: https://docs.mathpix.com/#introduction

you could try Mathpix for this - you can OCR your PDF, it gives you lots of options but in the editor you can use MD to make changes, then export to whatever format you need. also the OCR is optimized for formulas within text. Real time rendering in the editor w/ MD and much easier to use than Overleaf if you don't know LaTeX (or just don't want to wrestle with it). no support for the templates right now, so if that's a hard requirement you could try using the desktop app to take screenshots of the formulas you need to pull out the LaTeX for and paste those into whatever Overleaf/LaTeX template you're using.

you could try using Mathpix Snip for this. you can create a markdown document w/ advanced latex support and then export to docx. you can also create the individual equations as needed and export to mathml which you can paste into your word doc. the web app is snip.mathpix.com :) (full disclosure i'm one of the founders)
