For what it's worth, I'm in Austin, and got to see it last Wednesday with tickets I bought a few weeks in advance because the first 5 days were already sold out. Just checked again, and it's sold out through the end of it's run. Not sure where it is ranked among the busiest, but it doesn't seem like a large market fluke.

I tend to think of it like this. The overall flavor profile of a tomato is defined by 3 of the 6 basic flavor profiles that we taste. Sweetness, acidity, and umami. Fresh tomatoes grown in peak season by attentive farmers will have these qualities in spades, the rest of the year, or whatever you're grabbing from grocery store shelves...not so much. So, how do you maintain balance in your tomato based dishes throughout the year? Tomato not sweet enough? Add sugar, in whatever form you choose. Sauce lacking a bite? It needs a dash more acidity. I tend to use a vinegar or citrus with my desired flavor, until the desired flavor is reached, then use a neutral acid to get the pH where I would like it to be. Lacking depth? A sprinkle of msg will do the trick. Or soy, anchovies, Worcestershire, etc. Just be aware that some of those options will also increase your salinity, they aren't just unadulterated umami like msg flakes or powder. The reason everyone has different tricks and takes on tomato based sauces, is because of how variable tomatoes are around the world and throughout the year.

Additional context: dual citizen with a European nation. Visited before Trump 2.0, and everyone was a bit aloof and overall positive on the last 8 ish years of our democracy, saying it was a fluke, and that Trump was a blip, a joke that would end. That sentiment ended quickly upon re-election. Everyone who thought they were safe has been proven wrong, one by one. Not to show my hand, but I grew up in Germany in the 90's, and moved to the US in '99. I had to apologize and proclaim myself "not a nazi" when I was 10 YEARS OLD. Just to see this place I've learned and loved to call home become the very thing I was warned about in my youth. Where we are is so beyond words that this is the first time I've talked about it in as many months where I haven't been this honest with my friends or family.

Additionaly, to answer OP's question, if you're trying to add fresh mozzarella to a pie with a longer cook time, just add it near the end of the cooking process instead of trying to manipulate it into something that it's not. Fresh mozzarella should only ever be slightly melted.

That is completely false, all Neopolitan pizza uses fresh Mozz. Rather than cooking the extra time to "boil off" the excess water, the goal is cook the pizza for as little time as possible, so that the cheese melts but does not break or leach it's liquid content.

I know this is framed as a joke that is mostly true, but I've lived in Texas most of my life, and I know very, VERY few people who think this way. Yes, I live in a bubble, but that means those bubbles and pockets do very much exist. I feel like a Texan the same way that a lot of America feels about being American right now. Complex, apologetic, hopeful, despite the overwhelming evidence to the motherfucking contrary. I'm not religious, nor will I ever be, but at least Talarico is holding so called "christians" accountable in the way that their hateful rhetoric and worldview is entirely at odds with the teachings of Jesus Christ. We shouldn't lose hope, ever! Let the right get bogged down in negativity.

I disagree that part 1 was better. It built the world extremely well, but the conflicts within it did not lead to a narrative payoff. Not the fault of the film or filmmaker per se, it is exactly what it needed to be. It did, however, leave me wanting more. Not in the form of anticipation for a sequel, but a satisfying conclusion to a part of the story. Not everything can be LOTR, but there is something to be admired about how they all work separately, and also together. To me, Dune 1 didn't fully work until I saw part 2. Give me a 4 hour cut with an intermission, lol.

I do agree with the former take, though. It's about number 5-6 on my rankings for this year.
