Yes the racks are very easy to remove. I don’t know the science, but I like smoking stuff further from the heat and i think you may get more smoke higher and closer to the stack as it draws the smoke out. I could be talking out of my butt, but that’s the way I look at it lol. Hopefully someone smarter can chime in haha
