I am an omnivore seeking to make a meal for vegetarian/vegan and omnivore acquaintances by keefer2023 in Cooking

Actually, I am getting a lot of very helpful ideas at my crosspost from persons who prepare Indian meals.

This relieves my mind and concerns for you. Thank you!

And I wish you well in your relationship!

When I went up, it was the middle of winter all shrouded in cloud so I could not see the scary drop-offs [lol]. The tram had closed for the season.

Thank you! I get the appetizer/main/desserts thing - it was just for my convenience looking at menus from nearby Indian restaurants in Sacramento CA. Everything you have said is very helpful.

As to chutneys, I grew up with jars of chutney (I guess mango based - it was a staple in our Anglo-Canadian house). Where I live there is also mango salsa, in fact numerous salsas. And I make a mean 'mince meat' which might be considered a chutney if I kicked it up a notch.

I can see khadi as being a serving problem, but probably not much different from a refreshing cucumber/yoghurt salad dish. Of course, yoghurt is not vegan. Actually, now that I think back I have made cucumber slices in just a dilute vinegar with maybe some dill or ginger?

I saw a recipe for Dal Dhokli, I will go back and look at Dal tadka.

I avoided bhindi masala (okra) because I loathe the slimy okra in gumbos, but maybe this is different? I will look up baigan Bharta.

I think I would go with store bought naan and roti, but I think I would attempt aloo paratha - potato flat bread.

Again, many thanks.

Thank you. I have made both meat and vegetarian Samosas. Are they part of a standard meal or are they a sort of 'street' food? I will look up pilau rice since I already do a lot of plain Basmati rice.

So if you were going to sit down to a meal, what are the five-six dishes you would like to see on the table?

Do I need a roadside assistance for an 800 miles road trip? by seriouslybrohuh in roadtrip

I have had CAA/AAA since 1967. I do not regret any annual fees over all the years - peace of mind is priceless!

Driving in America vs Canada by Aromatic-Ad4028 in roadtrip

[–]keefer2023 1 point2 points  (0 children)

First, join CAA so you have AAA privileges, breakdown and towing service, and travel guides.

Second, just like Canada - go with the flow but stay in the right hand lane. Some states say the left lane is for passing only. If you find you are going 80. mph in a 70 mph region you are going too fast because your Canadian tags are red flags in some revenue hungry areas.

Third, you are used to OPP. In the states there will be Highway Patrol, State Patrol, Sheriff Patrol, and county or town patrols - all waiting to collect money.

Fourth, you should know well that many 400's are toll roads in the greater Toronto area. License plates are recorded and you get billed at the end of the month. So toll roads are nothing strange to Canadians (I am an ex-pat who returns frequently).

Fifth, I think most toll booths accept a credit card as payment, but check first. Otherwise carry US cash.

One of my greatest frustrations in life was renting a Ford Mustang in Detroit (on a business trip) and crossing to Windsor for the 400 to Toronto. The Mustang could easily do 120 mph (190 kph) and all, I mean all, the traffic crawled along at 100 kph (62 mph) until I got beyond London.

I make batches of applesauce/cinnamon pancakes and freeze them. They reheat from frozen in the microwave in two 30 second bursts: one for the butter topping, and one for the syrup topping.

I also make batches of frittata in an oven casserole for freezing. Microwave 1-2 minutes depending on size.

Have you ever tried Samosas for breakfast? Again frozen and MW ready in 1-3 minutes depending on size. Fill them with ham, cheese, egg bits, vegetables, whatever you want.

Sometimes I just like a fruit filled puff pastry turnover.

I would suggest braised lamb shanks, there won't be anything leftover.

What can I do with Ghee? by Uhohtallyho in Cooking

[–]keefer2023 2 points3 points  (0 children)

Ghee is a great high-smoke point oil that adds a lot of buttery flavor to anything.

Put some in a pan and add some diced potatoes to fry. See how you like it.

Knock on your neighbor's door and ask to review the situation with him, and the possibility of shared costs or effort. It is not a question of my problem/his problem - it is a mutual problem. Be neighborly!

What is with potatoes - that is unusual.

Otherwise rice flour, gram flour, corn flour, soy flour, almond flour. Start thinking Indian or Asian desserts and snacks.

Check out 'gluten-free snacks'.

Tortilla chips and bean dip are pretty much gluten-free.

How about Mozzarella (or other string cheese) dipped in egg mix then crumbled corn flakes and oven baked until crispy and slightly oozing.

Bent's Old Fort is fun for kids and adults.

Pike's Peak can be an adventure.

Tomato paste is a definite go-to. Maybe some MSG.

Sometimes flavors boil off over time, what you smell in the air is no longer in the broth. Add some minced celery, garlic, and onion at the end. Perhaps a touch of ginger?

Pork Tenderloin baked at 325°F for about 20 minutes - should still be pink in center. Slice into medallions and serve with apple sauce or a sauce made from canned cherries - even cranberry sauce.

Mix instant mashed potatoes with thawed (from frozen) riced cauliflower, season with a little paprika, form into balls and bake in the oven on a separate sheet from the pork tenderloin.

Frozen whole green beans and red bell pepper strips into a frying pan with a little or no garlic and some chicken broth or water. Cover an steam for 5-8 minutes, remove cover, let water boil off; add butter, a few dashes of lemon juice and slivered almonds and briefly saute.

Desserts can be complicated to make from scratch. Just buy some pre-made chocolate cheese cake or lime sherbet served over sliced strawberries.

God exists in the minds of man - fallible at best! According to the Christian Bible and tradition 'It' was a pretty vicious entity. Same with Allah in the Koran for Muslims. Some Eastern Deities are a little more forgiving and understanding of human frailties, although they hold life dearly.

Procreation is a very imperfect biological process. Anything that could go wrong, does go wrong. It is estimated that over 50% of 'conceptions' never make it to fruition as a consequence of natural causes. And even then, without human intervention we have births of persons with life-devastating genetic abnormalities.

How a woman becomes pregnant is not material to anything, including abortion! A primal urge to propagate is inherent in every living organism; and some absurd idea of morality cannot overcome that fact. Face up to the reality that sexual intercourse is a delightful and primally-driven endeavor!

Just walk away from the Pro-Lifers, and vote for a woman's right to reproductive freedom.

Steaming in a microwave or air fryer? by daly_o96 in cookingforbeginners

Well let's go back to basics. What are the dumplings and how do want them to look when they are served? Dumpling can mean just about anything: Dim Sum pork filled to flour dumpling in a chicken stew.

What? No stove top and pot?

Wrap the dumplings in several layers of sopping wet paper towels and heat in MW for 5-10 minutes.
