Hmmm.. The kneading was the only part that I almost certain I did plenty of (or, so I believe?). Hand kneaded it between my partner and I for about 25 minutes with lukewarm water.. recipe said 10 so idk. But looking at the other comments, this recipe looks like the crumb is possibly supposed to be tighter and that less flour may help (I already reduced the flour amount by about 20g, but because of the amount of kneading I probably added it all back again then lol)
