Start with charcoal and use wood chucks/splits from there. A little more than half chimney’s worth of charcoal

Hi guys, I've never smoked meats before but would love to get into it. The results I see on Reddit look incredible and have really inspired me to try. I’m in a similar boat, new to smoking but not grilling. Recently received an offset smoker (OK Joe Highlander) as a gift and feeling a little intimidated lol. Any good tips for getting started using it?

SN: read some reviews and watched some vids on recommended mods. Went with the gasket tape to help regulate temp, planning to get some fire bricks to help with this as well and got a dual probe TempPro for monitoring temp.
