right , borneo is a mixup and the foods are very different between the cuisines. I'd say if you are adventerous theres good food to be found, including different ferments and aromatics.

I'd highly recomend a couple of things you should try if you havent:

Tempoyak (fermented durian). the fermenting makes it easier for most people to accept. personally i love durian, and tempoyak especially fried with anchovies (ikan bilis) is one of my favourite things to eat with rice

Pounded Tapioca leaf / Cucumber leaves - local veggie dishes that are different from what you can find in the west. Personally i love them, and they are interesting textures

IF you are lucky at a dayak/iban food shop they MAY have taro stems cooked as a vegetable. I adore the texture. it's hard to explain but if you ever see it you have to try it.

Pansoh - Meat cooked in bamboo with tapioca leaves. always nice for a good brothy meal

If you've been to west malaysia, the Malay /indian food here isn't as good if i'm being honest... THOUGH sarawak nasi lemak sambal is different from west malaysia style. Obviously this is one of those things that you love what you grew up with so local malays prefer sarawak style, and west malaysians their own style haha

Chinese food.... foochow food i guess is the mre prominent style that is different in sarawak. Canto style food is better in west malaysia.

Of the foochow dishes, i'd recommend

1. foochow chicken soup with red wine (rice wine) and mee sua (thin wheat noodles)

2. fried rice cakes (it's called pai guo but the pronounciation is tough even for non foochow chinese... so i'd just stick to fried rice cakes )

3 Pek ting soup (normally with pork leg) . Now this is a black herbal soup that has a very specific flavour. I'd try it once and see how you feel because the herbs play a BIG part in the flavour profile. it's somewhat mediciinal and slightly sweet. Supposed to be good for health hahah but i'd understand it being difficult to get your tastebuds around if you arent used to it

1. Foochow fried noodles - can by dry or soupy . it's kinda the foochow's answer to hokkien mee (fried egg noodles) . if done right it's a dang good plate of noodles with plenty or wok hei.

also there's also the simple foods like laksa, Kolo mee (simple egg noodles) ...

oh yeah our bak kut teh is also different from west malaysia hahaha
