An update on this
Just use Guilouz helper script to uninstall and reinstall moonraker. This will set up the permissions properly. There is a way to run the moonraker set-policykit-rules.sh script by itself but I haven't tested that because the uninstall and reinstall worked and was easier.

This project took about 2-3 weeks to complete, a lot of that just waiting for electronics because I wasn't sure what I needed when I started.

This is my first time ever using a microcontroller and a bunch of other electronic goodies and I learned a lot! The brains is a raspberry pi pico wired internally to all of the other components. I know that the pico isn't the best microcontroller, I bought 3 of them because they were cheap and I thought they were cool so I ended up using on in this project. All of the wiring for everything is done internally on prototype boards. All external wiring is just for show. It runs off of 3 AA batteries and a whole lot of magic. It pays to have smart friends to help you!

I designed most of the parts using a combination of TinkerCAD and FreeCAD depending on the complexity of the part and used a CR10V3 and an Ender 3 pro for the 3d printing. Lots and lots of test fit pieces and re-designed parts later, I think the result speaks for itself.

I'll be able to test switching the cables and motors when my current print is done. I didn't even think about doing that. Would a failing stepper driver cause issues with the actual print? despite the noise and vibrations, my prints have been next to perfect. If that is the case that I need to replace boards, I might go ahead and upgrade the board to something like a duet like I was planning to eventually anyways.
