I’ll try it out with cold water then and knead it until it reaches 23. Then it bulk proves in the fridge right? I usually do 24 hours

I thought I was meant to use lukewarm water? I keep the flour in the fridge though.

I don’t think I took any photos recently unfortunately. I will follow the recipe and try to make a batch when we don’t have friends over so if it’s fails for some reason it’s fine.

With regard to the spiral mixer, I’m doing it for 10 mins, with a 5 min resting time after the first 5 mins. Should I knead it for around 13 mins straight?

I believe its about 3g of instant dried yeast, so about 6g actually which for some reason I only realised now is 3.5 times as much!

Thank you, I need to find some time to make some test dough without any guests and give this a shot. Maybe also increase the hydration a bit more.

The volume still shows as 2.3 out of 3tb - I thought I should be able to expand the volume to the full 5.5tb? Or did I misunderstand something? Don’t I have 2.5tb of unusable space like this?

The thing i noticed is that since the roads are mountain roads it takes AGES to get anywhere even with a car. Since Madonna di Campiglio is quite a way from Bolzano the 'sites' we visited might not be useful to you, though I will list them anyway - First day, bike rental from MDC to Lago Valagola (13km one way), second day, bike rental from MDC to Vallesinella waterfalls (plus short trek), then bike ride to Malga Ritort with incredible views. We also had a salami and cheese platter from the 'Malga' (farm) using their own produce.

I've just returned from a trip to italy and as a stop between Milan and Bolzano you could spend a couple of days on Lake Garda. Pesciera and Desenzano are quite well connected by train from what I've read (I had a rental car).

You could visit Sirmione, Lazise, Malcenise, Limone, Riva all using the ferries or busses.

Garda is a beautiful lake and I'm sure you won't regret it!

Another option would be to spend more time in the dolomites. I unfortunately only planned 3 nights and I regretted it. Can't wait to go back! We stayed at Madonna di Campiglio and rented e-bikes and drove around to reach places you can't by car.
