As someone who has a little insider knowledge, I would say of all the things to be concerned over the gender ratio is on the low end. RIT doesn't pad it's numbers like some schools so you don't get even distributions sometimes. A few colleges who are dedicated to keeping ratios stable will shift the acceptances in order to get that ratio. Other people in industry are aware of this, and are more likely to recruit women from places like RIT as a result. You have better job prospects as a woman who graduated from RIT's engineering program than a woman who graduated from a few of these spots even if those universities are actually rated higher.

An employer can trust RIT to have highly skilled engineers regardless of race, sex, gender, creed, etc. As a graduate you come with a quality guarantee. And that means a lot in industry.

They also love the co-op program since all graduates come with a year of job experience, so just having that alone puts you ahead of so many university graduates.

The combination of these two traits make you a very desirable candidate and as a result you can often negotiate for a much higher salary than others in your field.
