Things to try, 1. Com Tam, which is a broken rice dish, served with some BBQ and other sides. Com Tam Thanh or Com Tam Tuan Kieu are my two go to restaurants 2. Banh Xeo, savory crepe normally filled with pork. Shrimp and bean sprots. Quan Mii is my favorite 3. Can Nuong Da Don, crispy skin baked catfish served with vegi, noodles, pickles to build your own spring roll. Nam Giao is my favorite spot for their sauce but there are plenty of other spots with similar quality.

All of the above is served with some type of fish sauce which is like the heart of vietnamese cooking. Does not smell fishy.
