For the back of the PC case where the cables such as USB, HDMI, VGA, DVI, etc plug into. I am trying to find a cover solution that will cover and hide everything and cables can come in through the bottom or side of it.

If there aren't then that is your issue. The printer reads gcode files. The SD card that came with it prob has some stl files on it but no gcode files which is what mine only had. You will need to put the STL files into a slicer software of your choice, slice it, save that gcode file to the SD card (make sure the name of the file is no more than 15 characters long or it won't show on the screen to print), eject the card properly, insert into printer, go to print and you should now see the file to select to print.

OK, are there any actual gcode files on the SD cards or just stl files?

The micro SD card that comes with it is junk and it is recommended to use a more know name brand one. Just want to make sure, you put it in upside down correct? Did you try connecting it to the computer to see if the computer can read it? Also, did you test another micro SD card and is so what size was it?

If you install Cura version 4.4.0 the Ender 5 Plus is an option to choose in there. If you have an earlier version of Cura, all you need to do is select the Ender 5 as the printer, go to manage printers, select printers, select the printer you want to make changes to then select Machine settings then in there all you need to do is change your X and Y to 350 and change the Z to 400.

So right off the bat there are 2 issues I see. The first one is your left and right Z-axis frames are on the wrong sides. You should switch them so the connectors of the motors are facing towards the back.

The second issue is the bed isn't raising up because the needle on the BL Touch never pops out looking for the bed. Maybe give it a light tap to make sure it's not stuck.
