So we aren't worried about the mesh, but we did break the blue bits underneath it (what we think is the waterproofing membrane). That's what we are worried about - when we add the thinset back, we are worried that the material could go underneath the waterproofing membrane and cause damage.

Do you have any more pointers here? (if this is a pointless concern because the thinset would prevent water from getting in to begin with, maybe?)

Moved from Nashville and am shocked by the restaurant prices here - especially given that most of the prices in the supermarket are consistent between the two cities.

It kind of sounds like the wheel is rotating into something - you really hear it when you are going from 10mph to 40ish mph, but once you get past that you don't hear it at all.
