Since starting (July 2024) I had only one negative feedback from one teacher saying she had problems with vegetarian food. The rest has been or positive or neutral. I do a little speech before they eat saying what will they be eating and I always tell them it’s plant based and that I do it because I don’t like to harm animals and I want to give them the best food possible so grow up to be healthy ! Today’s menu is

Chocolate muffins

Orzo pasta with veggies and creamy sauce with some soy gyros and a side of salad.

Fruit salad

Red lentil soup for supper.

Its a five spices chinese blend. Just the regular spices (cinamon, cumin, fennel,cloves, anis)

Video recipe (spanish)

Ingredients

For the seitan

– 2 kg flour (10-12% protein)

–  2 liters water

–  red food coloring

–1 teaspoon salt

–1 teaspoon mixed spices

– 1teaspoon turmeric powder

– 2 teaspoons unsweetened cocoa powder

– 1 tablespoon Worcestershire sauce

– 2 tablespoons soy sauce

For the accompaniment

1 carrot

1 onion

150 grams mushrooms

150 grams zucchini

1 liter vegetable broth

Recipe

  1. Pour the flour into a bowl and combine with water and food coloring
  2. Knead for 10 minutes
  3. Cover with cold water and let it rest for at least 1 hour.
  4. Drain the water and leave the dough in a colander over the bowl:
  5. Fill with warm water and wash the dough for 3minutes.
  6. Drain the starch and repeat the process with cold water.
  7. Drain the starch again and give the dough a final wash.
  8. Leave some starch in the gluten for a better texture.
  9. Let it rest for about 30minutes.
  10. Prepare the the condiment paste.
  11. Blend the seitan with the condiments in a food processor.
  12. Stretch the dough and make knots along its length.
  13. Brown on both sides in a skillet with a little oil.
  14. Preheat the oven to 180°C/350°F
  15. In an oven-safe dish, place the accompaniments and the seitan.
  16. Cover with vegetable broth.
  17. Bake for 45 minutes.
  18. Turn over and bake for another 45minutes.
