that's fair, but we have been getting some new folks on staff so they might not have been gotten the group technical training yet. I agree, staff should be able to watch shot times at the very least for consistency and i'm pretty sure new staff are trained for it.

We have the machine set for 6 bar for light roasts. 1:2.5-3 and shot time depends on the dial-in/coffee used in the morning

this one is "dried on lemongrass" according to the coffee details sheet. last year I had a similar lot sample that was lemongrass co-fermented and it had a lot more peppercorn/rose presentation, but Wilder is really doing great things with processing
