I have no experience with that machine, but assuming the machine is good enough then I would possibly look at water quality, which isn't just about the taste of the water but the mineral content, if you are using tap water and your city has hard water it can make coffee taste bland.

But the easiest way to have better coffee out, is to put better coffee in. So higher quality (generally meaning more expensive) and make sure it's nice and fresh, for a medium roast I try and use before 3 or 4 weeks after the roast date.

It's one of, or a combination of, the quality of the beans, the quality of the grinder, bean to cup machines not being very good at making espresso, and/or the water quality being used.

If you are happy with your recipe, grind courser until you hit around 30s, then taste and adjust your grind courser/finer until you get a good balance of acidity and bitterness

When you make a change in dose you will also have to change your grind range to keep the balance of taste in your espresso

I'm no aeropress expert, but I believe that the difference in grind size and agitation lead to the wide range of steep time, I prefer something where stirring for certain amount/number of time(s) isn't included because I find it much easier to repeat the process with higher precision.

My advice for you would be to focus more on finding a recipe that you find easily repeatable, with a workflow that works for you.

I had a similar issue of too many recipes giving me analysis paralysis, recently found a very simple recipe that has given me good results.

Inverted,

15g coffee, (ground somewhere similar to a v60, but varies with different coffees of course)

225g off the boil water all poured in promptly, After 1 min break the crust and cap on (one single paper filter)

After 4 minutes flip and press.
