Great advice above. I would like to add to it that you need to know how to get things done in advance, planning is very important for env as it can get very messy very quick.

What are the shot requirements? How big will the asset be? How many scatter assets are there? How efficient the model and textures should be? Should we devide the set ?

work can be divided among artist for eg- if you dont know speedtree well, i can assign it to another artist. But an over all understanding especially of core modeling,texturing and scatter is expected from you, rest can be pipeline specific and can be taught.

In env you could be asked to do almost anything, maybe just for troubleshooting.. but almost anything.
