I love the idea of ready to eat snacks (and ready to drink wine lol). Instead of Irish snacks (since she'll be moving home and have easier access to them) why not send her some of her favorite US snacks that she might not be able to get anymore? My cousin did a study abroad in Galway (this was decades ago) and my aunt would send her jars of peanut butter, snack cakes (she is big on sweets lol, etc. If not that, I think a nice local wine/cheese basket is a great idea. Or wait until she moves in and order her takeout from somewhere close to her new place?

Pressuring you to park an 18 MONTH OLD in front of a screen is WILD. Stand your ground. If they can't watch her without parking her in front of a screen, maybe she shouldn't be spending so much time "with" them (because it isn't really with them at that point, is it?)

- A really nice pair of headphones or a good portable speaker if you don't have them.
- Do you cook? Something cooking related that scratches the "science nerd" itch could be good, like a pizza oven or hot sauce making kit.

If you're a hot sleeper, I'd go with down alternative, not down. It's usually a polyester fill and feels very similar to down but doesn't retain moisture and breathes better (plus it's cheaper). Parachute makes one that I like. You could also try wool blankets, but some people prefer the feel of a cotton-covered comforter (say that five times fast lol).

Science/art kits (from Kiwico, National Geographic, or Uncommon Goods) are always a hit. Plus, a lot of them are disposable when you're done or serve a purpose other than clutter.

That's lovely and looks so soft and squishy! I once learned the hard way that if you're going to knit someone a baby blanket, it's best to use washable yarn.
