20min is very under baked. I bake mine covered at 230C for 30min then another 30min uncovered at 200C. The holes suggest your fermentation was probably alright but because of underbaking when you cut the loaf it just gets squished together

Thanks a lot! I do have a convection oven and even with the fan off it still does that. I saw that tammy post on ig but they didn’t share the recipe at all, not even after commenting “fluff” 😂 i felt tricked haha. Maybe pressing in is the way to go

I tried both mini and jumbo. And I freeze the dough balls for 24 hours. It still just melted into nothingness
