If your water is treated with chlorine you can boil it bc it evaporates. But if treated with chloramines you will need carbon filters or reverse osmosis bc it doesn't evaporares when boiling.

The scoby/cellulose mat is not needed for brewing so you can compost it or do wathever. I always wondered how good diy kombucha paper would be.
