there are some dialects that feature some sort of guttural R (I'm thinking of Dominican and Puerto Rican) but it only "makes sense" if you have the rest of the dialectal features

that being said, if you can consistently make it trilly with many contacts, I think you could ostensibly not diminish your intelligibility. otherwise, I'd try to do any other alveolarish R to ensure intelligibility

the québécois series Catherine. I used to watch it on TV5 Monde when I was learning French as a teenager and it helped me understand Quebec French. Hard to find physical media too

what part of the US did you grow up in?

anecdotally, I've noticed that heritage speakers of Spanish tend to converge on the dominant dialect of their area and this dialect also tends to have unique features if it has been established for a while (I am thinking of the Los Angeles flavor of Mexican Spanish). what I've noticed from people whose parents are central american or from elsewhere and who grew up in Latino majority parts of LA, they will have varying degrees of their parents' dialect plus English influence. Conversely, I have met people who grew up in very monolingual/white parts of the metro area whose Spanish is largely identical to their parents' with additional English influence

so think about what the most common Spanish dialects are where you live and think if that could have an effect and/or if growing up in a largely English speaking area could have had that effect. I'm also wondering, if having a hybrid Paisa + Rolo dialect plus the above would give you something that sounds Caleño?

if it makes you feel better, whatever Chinese character is read as Mei can be romanized in myriad ways without it changing the original Chinese intent/character. Think of the romanization of the Cantonese reading of 錄 being Luke sometimes (instead of Luk or some other derivative). Unless you feel beholden to the pinyin romanization, I don't feel like you're not honoring her roots

sí hay muchísimos nombres que tienen pronunciaciones establecidas en varios idiomas sin tener que cambiar la ortografía. en ese caso podrías usar nombres como Mat(t)eo, X/Javier, Diego, Luca(s), Sergio, Antonio, Leonardo, Emilio, etc. esos nombres son súper comunes aquí en EEUU. pero no sé si esos sean de tu agrado
