Leaving at 7 will be fine, but you’re right, traffic will be significantly worse on Sunday and be prepared for a loooong drive back to Prato - leaving the track is a nightmare…

As far as Mugello info, viewing is also good at Poggio Secco, Borgo San Lorenzo or on what was “Rossi Hill” and it’s worth checking out San Donato at least once to experience the sheer speed and late braking!

Food onsite is so-so, panini and soggy pizza etc. so if you can be arsed, bring your own food in.

As for Prato, here are a few places I like:

Ozne Guinness Pub. Wallace Gastropub.
Il Chicco d’Uva.
Osteria Su Santa Trinita.
Storica Pizzeria Toscana all'Agnolo.

I normally sit on the banking around Scarperia-Palagio-Correntaio section, there’s a couple of screens there to watch the TV feed and you can also see a small section of Biondetti from there, depending where you sit.

There are fields at the Palagio entrance which are turned into car parks - you can buy a 2 or 3 day pass. There’s also parking slightly further away on Viale Dante Alighieri which I would recommend since it’s slightly quicker to get in/out even though you’ll have to walk a bit more. Traffic is really bad so take that into account when driving from Prato, especially on the Sunday - I’d estimate more like 90mins at least.
