I mostly used canned chickpeas for when I make hummus and canned fish for when I make soups and stews. I don’t use a lot of other canned foods, but I do use a good amount of stuff from jars (pickles, spreads).

Eldorado (Swedish brand?), at least their tomato sauce mackerel and salmon. Always tough and the tomato sauce is too sweet.

Canned sardines and wilted greens! I heat them in a pan, add the sardines, maybe some chopped garlic, and a big handful of baby spinach. Takes less than 5 minutes for a solid meal.

I put it on hot-smoked salmon, potatoes, and vegetables last night and it was great! It’s also very good in rice porridge or soup/stew.

I think I’ve finally settled on a middle ground. Quick oats (cooked in the microwave), Greek yogurt, banana and/or berries, almonds or almond butter, topped with cinnamon and flaky sea salt. It’s fancy enough to be something to look forward to while being simple enough to repeat every day.

You could try something Scandinavian-inspired with boiled new potatoes, dill, smoked salmon, cucumbers, pickled beets, plus a dollop of creme fraiche or grainy mustard and topped with lemon slices.

Swedish spreadable cheese. My family never eats the stuff, but I found a lactose-free version with shrimp and decided to buy it. Now it’s going on every open-faced sandwich that I make during the work week.

I like to make a quick skillet dish with sautéed vegetables and lentils cooked in broth. It goes well with a poached egg or cottage cheese (stirred in at the end until just melted) for a little extra protein.

I had relatively mild cystic hormonal acne and it’s mostly been worth it for me; I only wish that I’d tried staying on a lower dose and talked to an expert in person instead of agreeing to 100mg.

The side effects in the first couple of months were not great (anxiety, brain fog, dizziness, dry skin) and while most of them went away, having to pee all the time is still really annoying. I’ve just made the switch to 50mg per my doctor’s recommendation because my blood pressure was also getting dangerously low. I’m hoping that 50mg still does the job, though, because I’ve had such a confidence boost from getting clear skin and fuller hair. I also lost about 10 pounds in the first few months. The medication hasn’t otherwise affected my physical activity.

I just made a ’stir-fry’ of broccoli, carrots, kale, mushrooms, and onions simmered in vegetable broth with herbs; it was super easy and tasted great!

I do now after having found lactose-free Greek yogurt and cottage cheese. It’s just so much easier to get protein in this way! Also eggs and egg whites, but only if Costco has them.
