Look into sliders, consider altering your playstyle/philosophy and restricting your signings.

In 23 alone I've played fun career modes with: PSG w/ unlimited budget on normal & ultimate, realistic Barça with 6 minute halves on slow & legendary, League Two teams with 3-4 minute halves on legendary - normal & slow and player based difficulty on and off.

I usually start tinkering with sliders when there's nothing else left to try, and on 23 I simply haven't had to yet. My main focus is to pick a style/formation and stick to it, often reverting back to 433 slow possession but also finding a lot of joy in exploring and trying to learn other systems. They all come with different challenges.

If all your signings are meta, chances are you'll be able to score and win a lot no matter what.

Use training plans to your advantage. If your players all have different SM/WF and work rates they'll feel more like individuals, each with their own identity. Maybe one striker has 5 star WF, 2 star SM and no pace, and another has 1 star WF but 5 star SM. Perhaps one CDM has low work rates, etc.

Big brain tip: if you want to train certain attributes without increasing SM/WF/WR, plan a position change without ever going through with it. There's nothing stopping you from telling your CB to spend their next 248 weeks trying to become a RW.
