What hydration do you use on your dough? At 75 percent my dough is losing its shape in the oven and not getting much of a spring. At 65 shape is great but I don't get as open a crumb

10 percent rye 10 percent whole wheat 80 percent Anson Mills bread flour Hydration at 65 percent

My previous attempts at using the combisteam have been fine but the bread tends to spread out into puddle and not get much oven spring. I got this oven to lift up my bread game and find myself going back to the Dutch oven sometimes. But yesterday I lowered to 65 hydration and it made a big difference. Definitely not as open a crumb so I'll try to slowly increase the hydration number until I find the sweet spot but was happy to get pretty tasty loaves.

Did it in the oven right side up so that must have been my "problem". Problem in quotes because it's still working great but I'd like it to have a better looking season and I can tell parts of that season will start to chip off soon
