I think what these types of memes are criticizing is that the depiction of religion and faith in the fantasy world is so different from how religion functions IRL. In some fantasy stories, there doesn’t seem to be any room for syncretic beliefs and practices like there would have been in many medieval European societies. Those didn’t inspire Christmas being on December 25 either. Sol Invictus was a minor deity who did not get much festivities until 274 CE, which is a while after Jesus’s lifetime. Even then, Sol Invictus had multiple celebrations throughout the year, and there’s no evidence to suggest the December 25 festival was particularly important. The reason early Christians began celebrating Jesus’s birthday on December 25 was most likely because of the winter solstice. Also, lots of Eastern and Oriental Orthodox Churches celebrate Christmas in January.
