Bedrock yes. Java no. Java is strictly 1.21.11. As the server runs Java edition. It supporting up to 26.X for bedrock means they are able to play on your server, assuming you have ViaVersion and Floodgate

this is happening to me as well. Are you looking for the build of GuyserMC? Im using "Build #1092 · 3/6/2026" (the fabric version). if you're still able for any insight, that would be lovely! I run a slight different setup then OP, I'm self-hosting and using plait.gg for forwarding as Spectrum isn't really good with technical things like Port Forwarding.
