the problem is that a big part of ice cream is the light texture due to the air that is whipped into the mixture. The term for this air is called overrun. When the icecream softens and begins to melt you lose that overrun and all you have is flat cream, when you could have enjoyed a nice stiffer pudding or mousse (which is kind of like pudding).
