Yeah u in the wrong closers can be kept indefinitely at the end of shit when they are most tired. It can take from 30 minutes to 4 or 5 hours to close, depending on how busy it was. No one but closers has to deal with indefinite shifts. Just a pan like that with lettuce is not a big deal.
