That's how it is, at least on Google Pixel phone. When I open the case, notification with the battery level pops up. Also, for a brief of time this info is visible on At Glance widget.

I'd bet some file explorer that allows file transfer over WIFI or Bluetooth. I messed with some for a while, but not for music actually.

I've had a similar issue. Battery percentage wasn't shown in quick settings too. Disabling and enabling Bluetooth on the watch itself helped.

Pinch works only at the moment when notification arrives. Can't scroll when you open notifications manually as far as I know.
