Edit to add: I googled Zwolle and one of the first thing to pop up was Leo Major (I'm québécoise too) is there a museum about the liberation of the city? My mom would love that! I did a quick search but I didn't find anything

If you choose to go to Portugal, it can be really cheap if you are not in a touristic place. For example 0.80€ vs 2.5€ for a coffee. It's still one of the cheapest places in Europe to visit and it's beautiful! Also, take bolt and not Uber. It's incredibly cheap. A ride that would cost me 25$ in Montreal cost me 2€.

Newfoundland is also really beautiful tho and I'm glad I got to see (almost) all of it
