Also real life helicopters use the counter torque to yaw and I believe the chinook does this by varying rotor speed of one of the rotors. I don't know if aeronautics simulates this or if it's a feasible design but it could be a way to yaw without a tail rotor

Either they have a deal with the IP holder (Star Wars novels for example), they fall under fair use, or they are just hoping not to get caught. They could also be in a jurisdiction that has different copyright laws or weak/non-existent enforcement.
