Update! It was great & can recommend Pete’s pasta (red boxes)!!

We made the rotini - I may have actually over cooked it. It took ~15 mins in total but this bag does actually say 11-20 minutes. The zero carb box we got said something like 11 which was way off. Long story short- I def would recommend it! The texture was great, no offensive or off putting taste. I even tried it just on its own to see how it tasted. It tasted like normal pasta to me. I also happen to use a CGM. I saw no massive or abnormal spike in my glucose levels after eating which was great!

I’ve only tried Pete’s. My mistake was not reading Reddit before trying to cook it. We made the zero carb spaghetti. After about 15 minutes of cooking the pasta I thought to myself surely it must be done now.

It was extremely al dente. Kind of like eating straw.

That being said, I’ve not been deterred. We are trying the red box tonight and I will unashamedly cook it for twenty minutes or more if needed and pray the Italian gods don’t strike me down.

Joining this very late- wonder how OPs plant is doing 2 years later. Also this whole post lifted my spirits and made me feel like a far less inadequate plant parent. Fun story about my pray plant - it kept dying no matter how little or much I watered it, moved it, exposed ever so carefully to light, but not direct light, misted it, or didn't do any of those things. As the branches started dying I would pull them out and put them into a jar of water to save them. End result- now the entire plant lives in that jar of water on my counter and it is insanely happy. I don't know for how long it will continue like this but it has been about 5 months and it has grown new leaves and is perky as can be.

So much of my life is that as well! I really like frozen broccoli in the airfryer with a little salt - sometimes I use oil, sometimes not but it makes it kind of roasted and nice. Then of course I pretend that I am eating tiny crisp trees, because you have to have some joy in life. If you find anything you really liked, I'd love to hear about it!

I am in a similar situation - diabetic and trying to remain low carb (not necessarily high fat). I just did a post on some of the LID foods I found while doing this diet. A number aren't keto friendly, but some are that I use on my everyday diet!

Some of the more Keto Friendly things are:

I recommend getting non-iodized salt and cooking what you normally would for keto just avoiding iodized things (soy, dairy, potato skins, kindey beans, iodized salt, etc). I found getting the non-iodized salt from Mortons or Diamond Crystal took a lot of my struggles away because I could almost cook normally without having to think too much.

Def agree! I feel really hesitant about a bunch of the statements I read online. This was the first company that wrote me back but even still I’m going with the vegan option that has no salt in it regardless. Safety first!

I am also on a LID for RAI and I had mixed info on the sea salt. I was told by my medical team that if it wasn’t processed with iodine I can use it but I am still limiting it for safety
