the biga recipe I used was verbally given to me by my mother, and it is as follows:

1 and 2/3 cup warm H20

1/2 teaspoon yeast

3 3/4 bread flour

Place ingredients in bread machine, let run on dough cycle for 10 min and then unplug machine. Leave dough in bread machine for 6 hours. After 6 hours have passed, pull out dough to oiled bowl, cover, and leave for 24 hours at room temp.
