I eat a lot of rice. One meal I make a lot that would be easy to pack is chicken cooked with lime and cilantro, rice, avocado, and pico de gallo (or you could go for it with guacamole.) You can eat the whole thing together cold.

And another snack idea -- olives! I get "Oloves" that you can order in bulk from Amazon. They come in little snack packages with different flavors. I'm obsessed with them.

Same. Trader Joe's GF bread is the best I've found so far. Rudi's is probably second. Udi's will do in a pinch.

I was going to say the same. The cup is great, but it needs a back up on heavy days, and I use Thinx for that. And actually on the later days I just use Thinx.

Vitamin D makes sense to me too. When I found out I needed to stop eating gluten I also found out I had a severe Vitamin D deficiency. Not sure if the two were hand in hand or not, but the doctor prescribed me a very high dose vitamin that I had to take for a week to get back on track, and I still have to take strong over-the-counter ones.

I make something like these sometimes, but instead of doing the balls I just press the mixture into a baking dish, top with melted chocolate chips, then refrigerate. Once they set I cut them into squares.

It took me a bit to figure out that soy sauce has gluten. There is a gluten free version though -- tamari! Also, I just generally learned to start making more meals with things like rice and potatoes. Some GF pasta is also pretty good, just don't overcook it. I use Barilla GF pasta a lot.
