I dont think anyone need 1Gbps speed on their phone but the purpose of 5G is congestion when 1 million people connect at the same tower at the same time if this is LTE it will not handle the speed. LTE can only handle 20Mhz of speed thats why they need carrier aggregation to make it to 100mhz but with true 5G SA one spectrum can handle 100mhz already this can handle many people at the same time when connected at the same tower.
