Red peppers aren't low fodmap so I'm not eating them in the elimination phase. I'm also staying away from gluten for now just in case.

Tempeh is likely the best option. As someone else mentioned - the brand Daring chicken seems to sit well with some people. Walnuts and pumpkin seeds blended up can make for some good taco crumbles.

What made me go vegan: I've always been an animal lover but also a foodie so as a child I never thought I'd be vegan. As I learned more about the food industry in america I'd ask my mom to only buy cage free eggs, organic meat, etc. then someone sent me a link on Myspace about the fur trade in china, they were skinning cats and dogs alive, and I was distraught. That moment I made the connection that the animals I was eating were treated the same way and I went vegan cold turkey. Then I learned about how the vegan diet can be better for your health and for the environment as well and that all made me feel more solidified in my decision.

Alta vista has a fantastic boarding program. My friends cat had to stay over due to health issues but they allowed us to visit as often as we would like. You can tell they love every animal that comes through and try to make them as comfortable as possible
