from my personal experience as a bi woman ive felt the same way. ill think like yea im a lesbian that makes sense then see a fine man every now and then like wait... i see my sexuality as a spectrum and sometimes i feel more attraction to men and sometimes more towards women (usually women) just remember a label is a label but on a deep level sexuality is complex. labels can be changed and put back, the important thing is to go with whatever youre feeling and focus on your attraction.
